How to store desi ghee so it stays fresh
No fridge needed. Four simple habits keep a jar of ghee tasting fresh to the last spoon.

Well-made ghee has almost no water left in it, which is why it keeps for months without a fridge. What spoils ghee is water, air, light and dirty spoons.
Four habits
- Always use a clean, completely dry spoon. A drop of water or a crumb of food is the main reason ghee goes off.
- Close the lid after every use.
- Keep the jar away from the stove and out of direct sunlight.
- For daily use, fill a small katori from the jar and keep the big jar closed.
How to know if ghee has gone off
Rancid ghee smells sharp, sour or like old oil, and tastes bitter. If it smells nutty and sweet, it is fine, whatever its texture.
The fridge is fine if your kitchen is very hot, but ghee will set hard. Take it out a little before you need it.
